Ice Box Cake



This is a recipe from my mom's blog and how is works is you layer cookies and whipped cream and refrigerate over night. The cookies moisten up and the whipped cream dries out a bit making a delicious cake. I used way too much sugar in the whipped cream so if the photos look wrong don't worry.

Ingredients:

1/2 Cup heavy whipping cream.
2-3 TBSP Icing sugar.
24 round cookies.


Beat the cream until is is at stiff peak stage. 


Fold in the icing sugar.


Now put one cookie on a plate.


Add a dollop of whipped cream on top of the cookie.


Place another cookie on top.


Repeat the process until you have an eight cookie high cake.


Coat the outside of the cake with the whipped cream.


Refrigerate for at least 12 hours.


Eat and Enjoy.
